Pineapple Tart or Slice

A quick and easy desert that is absolutely delicious. Serve sprinkled with some shredded coconut and a dollop of cream.

Preparation: 5 mins (if using a ready-crust)
Cooking Time: chill for a few hours
Serves approx. 6

Ingredients
1 sml tin crushed pineapple  - drained
500ml sour cream
1 pkt vanilla instant pudding mix
1 x ready-made pie case  (or use a biscuit base as you would for a cheesecake)

Directions
•  Mix altogether really well and place in a ready baked pie shell or over a prepared cheesecake base.

•  Refrigerate for a few hours before serving.

Variations:
•  Use Lattice Biscuits (a flaky, sweet biscuit) as the base. Each square of biscuit then becomes one serve.

Cooking Hints:  If you are making your own biscuit base, use melted butter, not margarine, and you’ll get a much crunchier, firmer base.

NOTE: You could make this ahead at home the day before you head off on a camping trip and take with you.
