LATINA™ FRESH - so deliciously simple
I'm always on the look out for easy, but delicious meals, and I love pasta. For camping and an easy and light summer salad at the end of the day, the readymade fresh pastas that are available on the supermarket shelves make life so simple, and Latina® Fresh pasta has a great range of both pasta and sauces.

They have also produced two fantastic eCookbooks (see below http://latinafresh.com.au/eCookbooks) - Deliciously Fresh & Deliciously Simple, Volumes 1 and 2, with lots of mouth-watering recipes. Both of these eCookbooks are available for free download from their web site, and the recipes in this column have come from Vol 1. Can't wait to try some from Vol 2

As their web site also says that these recipes are just a guide and if you can't find the variety of pasta mentioned in the recipe, then by all means choose another from the Latina® range.

Ready to eat in 10 minutes

375g pack Latina® Fresh Slow Roasted Vegetable Ravioli
2 x 120g cans corn kernels, drained
1/2 cup whole egg mayonnaise
1/2 cup Greek-style yogurt
1/2 lemon, zested and juiced
1 spring onion, sliced
425g can tuna in spring water, drained and gently flaked

Add Latina® ravioli to large saucepan of boiling water. Return to the boil and cook, stirring occasionally, for 5 minutes or until al dente. Drain and cool slightly.
Meanwhile, combine ravioli, corn, mayonnaise, yogurt, lemon zest, juice and spring onion in a medium bowl. Add tuna and gently combine.
Serves: 4 as a light lunch
Tip: This recipe is great served as a lunchbox special, or taken on a picnic.

Ready to eat in 25 minutes

1 cup whole egg mayonnaise
8 anchovies
1 clove garlic, crushed
1 cup shaved parmesan
150g lean bacon, cut into thin strips
625g pack Latina® Fresh Potato Gnocchi
1 teaspoon white vinegar
4 eggs
150g pack croutons
1/2 baby cos lettuce, leaves rinsed and dried

For the dressing, place mayonnaise, anchovies, garlic, half the parmesan and cup water in a food processor and blitz until smooth.
Cook bacon in a non-stick frying pan over medium heat for about 3 minutes, or until crisp. Remove from pan and drain on absorbent paper.
Add Latina® gnocchi to large saucepan of boiling water. Remove gently with a draining spoon as soon as gnocchi floats to the surface (about two minutes). Drain well.
Meanwhile, add vinegar to medium saucepan of simmering water. Add one egg to poach for about 2 minutes, or until cooked to your liking. Remove with slotted spoon and set aside. Repeat the process with remaining eggs.
Combine bacon, gnocchi, croutons and dressing in a large serving bowl. Toss to coat evenly and gently fold in lettuce and remaining parmesan. Top with poached eggs. Serve immediately.
Serves: 4 or 1 large salad to share
Tip: Toss together the dressing with the gnocchi and salad ingredients just before serving. For an easier alternative to poached eggs, simply boil them instead.

Tender beef, plump Feta & Sun Dried Tomato Agnolotti, and flavoursome marinated antipasto combine to make a salad as delicious as it is easy.

200g lean beef rump
375g pack Latina® Fresh Slow Roasted Vegetable Ravioli
50g baby rocket
6 semi-dried tomatoes, chopped roughly
2 pieces marinated eggplant, chopped roughly
2 pieces marinated red capsicum, sliced into strips
1/4 red onion, sliced finely
1/2 cup small whole basil leaves
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Cook beef on the BBQ grill over medium-high heat for 2 minutes each side or until cooked as you like. Cover with foil and rest for 5 minutes. Slice beef thinly across the grain.
Meanwhile, add Latina agnolotti to large saucepan of boiling water. Return to the boil and cook for 5 minutes. Drain and cool slightly.
Gently toss rocket, tomato, eggplant, capsicum, onion and basil together in a large bowl. Add drained agnolotti and combine.
Place mixture in a serving bowl and top with beef. Drizzle with oil and vinegar.
Serves: 4
Preparation time: 15 minutes
Cooking time: 10 minutes
TIP: Marinated eggplant and red peppers are available from the deli.

Combine all natural Latina Slow Roasted Vegetable Ravioli, crunchy beans and sweet tomatoes with tuna for this modern twist on the French classic.

375g pack Latina® Fresh Slow Roasted Vegetable Ravioli
4 eggs
500g green beans, blanched and halved diagonally
4 large vine-ripened tomatoes, chopped
2 x 185g cans tuna in olive oil, drained, reserving 2 tablespoons of oil
1/4 cup pitted kalamata olives, halved
1/4 cup fresh flat-leaf parsley leaves, roughly torn
8 small anchovy fillets, torn lengthways
2 tablespoons freshly squeezed lemon juice
Freshly cracked pepper, for serving

Add Latina ravioli to large saucepan of boiling water. Return to the boil and cook for 5 minutes. Drain and cool slightly.
Meanwhile, place eggs in a small saucepan, cover with cold water, bring to the boil and cook for 4 minutes. Cool in cold water, peel and cut into quarters.
Combine ravioli, beans, tomatoes, tuna, olives, parsley and anchovies in a large bowl.
Combine reserved oil from tuna and lemon juice in a screw top jar. Add dressing to salad and gently combine. Serve topped with eggs and pepper.
Serves: 6 (or 1 large salad to share)
Preparation time: 25 minutes
Cooking time: 15 minutes
Tip: Green beans are available all year round in Australia and are best stored in an airtight plastic bag or container in your refrigerator crisper.
